Mixing it up at The Club House - have you tried Fefe's popular cocktails or mocktails?
If you haven't yet been to The Club House at West Bexington, then you should, even if it's to try one of manager and mixologist, Fefe Kovacs', numerous - and delicious - cocktails, while enjoying the view out over Chesil Beach.
He has already created a spirited little cocktail especially for Mother's Day, aptly naming it Mum's The Word – and there are plenty more to try.
He carries with him, in his back pocket, a little black book of cocktail ideas and flavours – his little book of alchemy, which contains 300 – 400 creations, with, he says, far more bubbling away in his mind.
And The Club House has a good selection to choose from, with its signature West Bexington Breeze – a rum-based cocktail with Limoncello, elderflower liqueur and lime to the Barnes Wallace, a nod to the Second World War English scientist who invented the bouncing bomb, and tested it along The Fleet off Chesil.
And then there's the best seller, the Fireball – a tasty little number made of gin, cassis, elderflower, apple juice and lime juice.
He also has a good repertoire in non-alcoholic cocktails too, including aloe gel-based dinks; so not only do they look and taste good, they're good for your skin too! They include Mango Seedquiri, a Peach Bellini, Aloe Fizz, Spicy Tonic and more.
Fefe takes his inspiration from anything that catches his eye; and almost as a challenge, asking himself it he can 'mix that together'.
"Even when I'm driving to and from work, or back and forth from London [where he is taking a sommelier course], I am thinking about drinks and cocktails," says Fefe.
Saying that this is his passion is an understatement – but it wasn't always so. This month sees his 10th anniversary on coming to the UK; he initially arrived in London with the hopes of working in museum research, but quickly found that his Hungarian qualifications weren't recognised and he would have to re-qualify here.
Rather than be discouraged he decided that the quickest way to earn money was to get a job in hospitality, and he soon found a job as a kitchen porter - and quickly worked his way up to waiter, bar tender, front of house and then management. And he did this with Mark Hix and his Oyster and Chop House in London.
"I worked there for seven years, both in London then down in Lyme Regis," says Fefe, "and I like learning new things and be busy. So, I have a lot to be thankful for. I learnt a lot about fine dining, hospitality and the business."
He's been at The Club House at West Bexington for just over three years now, mixing and creating cocktails since day one. This paired with his extensive knowledge and taste for wine – he is able to recommend great food and wine pairings at The Club House.
"Steve and Debbie [owners] here at The Club have been great. They've allowed me total freedom to create when I came here, to create new cocktails and mocktails.
"I get a lot of inspiration from talking to our guests, especially when they tell me what flavours and tastes they like, which inspires me in turn to create."
As well as being known for his cocktails he has an extensive knowledge of wine, and is this week taking his Wine & Spirit Education Trust 3 (Advanced Sommelier test) – and takes great pleasure in pairing good wines with the fabulous seafood dishes at The Club.
"Many of the wines are easy drinking and good with fish," says Fefe, "and we have many good food and wine pairings and unique wines you won't find elsewhere."
